RAW BRAZILIAN TRUFFLES

These are fabulous to bring at dinner parties, they also make great little gifts… (Recipe from Everyday Raw Desserts by Matthew Kenney).  

Ingredients

3/4 Cup Cacao Powder
1 1/2 Cups Cashews, Soaked for 2 to 4 hours
3/4 Cup Agave or Maple Syrup
1 Teaspoon Vanilla Extract
1 Teaspoon Cinnamon
1 Teaspoon Salt
3/4 Cup Cacao Butter, Melted
Approximately 1 Cup Cacao Nibs

Blend all ingredients except for the cacao butter and cacao nibs in a Vita-Mix until smooth. Slowly add the cacao butter and continue to blend until completely incorporated. Pour into a bowl and place in refrigerator for at least 30 minutes until mixture becomes firm enough to scoop and mold. Shape into balls and roll in cacao nibs to coat. Store in freezer.

    Are you able to find all these ingredients at a regular grocery store? (Will Nesters in Whistler have these or will a trip to the city be better?) Thanks

      Hi Kate! You should be able to find all ingredients at Nesters except maybe the cacao butter. Otherwise you get can that at Wholefoods and I really like the brand Artisana.

      Hello Hannah, this one was measured as shavings but no biggie either way.. it can’t hurt to have a little bit extra :)
