I LOVE my honey! I love it in my tea in the morning and I use it for many raw desserts. But I had been wondering about the negative impact of the over consumption of it, and I found this important information that makes me think twice; Bees are an extremely important part of our ecosystem and the depopulation of bees could have a huge impact on the environment.

Derek Tresize Making Gains with Vegan Diet

Derek is truly inspiring, taking two contradictory ideas, vegan diets and bodybuilding, and paving a healthier way to excel in the sport of bodybuilding. With biceps the size of cannonballs, bodybuilder Derek Tresize placed in the top three of his class at the NANBF Championships here in Seattle. Bodybuilding for the past 5 years, he converted to a plant-based diet at the age of 19, and saw his overall performance in sports like football, cross country, powerlifting, and kayaking improve across the board.

Having a diet requiring 6000 calories a day, it’s astounding to know that Derek earned his muscle mass through a raw vegan diet. It is a common prenotion that vegans have a protein deficiency, but as Derek proves, plants provide all the protein anyone would need. “Animals consume massive amounts of resources and essentially convert plant protein into its own muscle tissue, so why not just skip the middle man?”

Food Preservation Workshop

First I want to thank Squamish CAN for supporting this event,  it feels GOOD to use government funds to offer a valuable experience for the community – for FREE

This workshop on Tuesday was on DEHYDRATION. I wasn’t sure if people expected to be learning how to dehydrate grapes and apples but I think they were pretty excited to leave feeling like making gourmet raw food can be easy AND tasty! We made Corn Tortilla Wraps (filled with cashew sour cream, peppers, avocados and chipotle salsa), Crackers (with fermented cashew cheese), Fruit Leather (rolled with almond butter and honey), and Macaroons to wrap it up!

I loved how everyone engaged and asked many questions, it felt more like a conversation where people really got to connect with each other and the food. I strongly encourage these types of events to allow communities to grow together, share ideas and support each other.

Quick Fuel Snack

I often find myself running around with no time to prepare healthy meals in advance. So I always make sure to keep certain Superfoods in my cupboards such as Chia Seeds and Goji Berries. Here’s an example of a quick snack I make for myself; I simply put chia seeds and goji berries in water and let it sit for about 15 minutes or until the seeds and berries absorbs the water and becomes soft and gelatinous. Serena Williams Wins Tennis Title on a Raw Food Diet

Who says athletes need “animal protein” – it’s a MYTH. Serena Williams, American tennis champion and raw-vegan food dieter, beat the world’s top-ranked player, Victoria Azarenka, last Sunday to win the US Open women’s singles title. I truly believe that her raw diet that she had switched over to in support of her sister, Venus, earlier this year has helped play a role in her success.  It’s exciting to see professional athletes starting to come out and talking about their choice to convert to a raw food diet. “Even though I’m 30, I feel so young,” Williams said. “I’ve never felt as fit and more excited and more hungry.”

Brazil Nut – Vanilla Ice Cream

This is my favorite ice cream! LOVE the taste of brazil nut milk. This recipe is from “Raw For Dessert” of Jennifer Cornbleet.

Ingredients:
2 Cups Brazil Nut Milk (see below)
1/2 Cup Cashews, soaked for 8 to 12 hours
1/2 Cup Agave
2 Teaspoon Vanilla Extract
2 Vanilla Beans
1/8 Teaspoon Salt

Pour 1/2 cup of the brazil nut milk and all the cashews in a blender and process until very smooth. Add the remaining 1 1/2 cups brazil nut milk and all of the agave, vanilla extract, vanilla beans, and salt and process until blended. Transfer to a jar and chill in the refrigerator for at least 2 hours or up to 2 days. Put the mixture in a ice-cream maker and freeze according to the manufacturer’s directions.

Scott Jurek excels on plant-based diet

Believe it or not there are a ton of athletes who thrive on a plant based diet and think it’s important to highlight these people and their accomplishments.  Ill be featuring these individuals from time to time, hoping to inspire and break down any misconceptions about plant based diets and performance. – Priscilla

Words like “ultra” should not be used frivolously, but ultra runner Scott Jurek fully deserves the descriptor. His resume of races is crazy, including 24-hour runs and over-100 miles in length. In 2010, he set a U.S. all-surface record in the 24-Hour Run with 165.7 miles. He was named Ultra-Runner of the Year three times by Ultrarunning Magazine. With the publishing of his acclaimed book “Eat and Run,” Jurek extends his accomplishments off the trail.

What could fuel such feats? For Jurek, a big source of his success has been a wholesome plant-based diet. As a graduate student, Jurek noticed how a diet in high-quality food benefited those living active lifestyles. Raw Food Workshop in Seattle: New friends, yummy food

My raw workshop in Seattle was a lot of work, but fully worth it!!! Much like an excellent dish, there was plenty of preparation and work, all made worth it by the payoff of sharing good food with friends.

Seattle is such an incredible place for those interested in health, food, and environment, and was such a cool location for my workshop where i was able to share tips for living raw. With the help of Air, Puget Sound Creative, MAKERS, and Bluewater Vodka the workshop was a complete success: inspirational, instructive, social and fun.

I was blown away by MAKERS, where the event was held at. Those new to raw foods were surprised to find a menu that included my raw flat bread pizza, yummy drinks and raw cheesecake. As we ate, the looks on the girls faces said it all! At that point I thought to myself “mission accomplish!” [Read more...]
